<11. Bg5> f6 12. dxe5 would prevent 12...gxf3 because White has too many things going on in the center, so 11. Bg5 f6 12. dxe5 fxg5 13. Nd4 and White at least survives the immediate threats. But that would be a lot to calculate during a simul.

  beatgiant: Instead of taking the bait with 10. hxg4?!, White could play 10. c3 and simply continue development.

For example, 10. c3 Bd7 11. Bg5 f6 12. Bd2 and Black's position looks horrendous. Black's knight on g4 and pawn on h5 are misplaced, the weakened kingside make it hard for Black to castle there, White still has some pressure in the center, and the knight is still hanging and will eventually need to retreat to h6.
